Sharna’s granola

A recipe based off of what our friend Sharna does. Very tasty!

Here’s the granola recipe – enjoy and experiment! Omit or add anything you want, and adjust quantities at will.

PHASE I

  • 4-5 cups rolled oats – 1.5#
  • 1-2 T powdered ginger
  • 2 pinches of salt
  • handful of sunflower seeds
  • handful of pumpkin seeds
  • handful of chopped pecans
  • 2 handfuls of coconut
  • 1-2 T brown sugar
  • about 1/4 cup honey
  • about 1/8 cup canola oil (grapeseed oil works well too)

1. mix all of the above in a bowl until well combined
2. spread evenly on baking sheet and bake 15 minutes on top rack at 350
3. let cool

PHASE II

  • cranberries
  • yellow raisins
  • finely chopped crystallized ginger

4. scrape off with off with offset spatula
5. dump back in bowl and mix gently
6. store in airtight container

    Added a bit more honey and oil to help get it to clump a bit more. We also keep baking it a bit longer to attain a nuttier, crunchier flavor.
