A really comforting dish. When Michelle sprung this on me last year, I thought “OK, I’ll try”. Both of us were smitten by the comfort-food quality of this dish. This is best for a colder day.
The recipe is fairly loose in reality. It’s really onions / aromatics, veggies all mixed into mashed potatoes. This works if you have leftover mashed potatoes, assorted veggies on hand, etc.

serves 2-3 as a main course
Ingredients
- 5 oz cheese cubes
- 2 pounds potatoes, or old mashed potatoes
- 1 red bell pepper
- 1 medium onion, diced
- 1 tbsp coarse mustard
- 1/3 head curly endive
- sprigs of chicory
- 1/2 cup milk
- 2 tablespoons butter
- nutmeg
- pepper
- salt
- 2 eggs
- If using fresh potatoes: peel and dice the potatoes, then cover them with water in medium pot and boil until for tender, about 15 minutes.
- Meanwhile, roast your red pepper with your preferred method, either directly over a gas burner, or in your broiler. Once adequately charred, place in a bowl and cover with plastic wrap to cool, or in a brown paper bag. You are looking for the steam to loosen the skin.
- Melt one tablespoon butter over low heat and cook onions until lightly caramelized. Roughly chop your chicory. Next, peel and chop your red pepper, slipping off the charred skin and cleaning the pepper of its ribs, innards, and seeds. Add red pepper to caramelized onions sauté together.
- Drain potatoes, return to pot, and add mustard, milk, and 1 tablespoon butter. Mash.
- Stir in cheese cubes, onions, red peppers, and chicory.
- Season with salt, pepper, and a little freshly grated nutmeg.
- Fry the eggs, topping each dish. Serve hot, topped with a fried egg.
The general recipe is be:
- Cook potatoes until tender, if need be. Mash them up and put aside.
- Saute onions and other aromatics together in butter until lightly caramelized (light brown). Other aromatics include garlic, celery and shallots.
- Add vegetables into the dish according to how long they cook. Such as carrots first, down to shorter cook veggies like spinach.
- Begin frying the eggs.
- Stir in potatoes along with butter and milk.
- Place potato / veggie mixture into bowls.
- Season with salt and pepper.
- Top each bowl with fried egg.
