A recipe based off of what our friend Sharna does. Very tasty!
Here’s the granola recipe – enjoy and experiment! Omit or add anything you want, and adjust quantities at will.
PHASE I
- 4-5 cups rolled oats – 1.5#
- 1-2 T powdered ginger
- 2 pinches of salt
- handful of sunflower seeds
- handful of pumpkin seeds
- handful of chopped pecans
- 2 handfuls of coconut
- 1-2 T brown sugar
- about 1/4 cup honey
- about 1/8 cup canola oil (grapeseed oil works well too)
1. mix all of the above in a bowl until well combined
2. spread evenly on baking sheet and bake 15 minutes on top rack at 350
3. let cool
PHASE II
- cranberries
- yellow raisins
- finely chopped crystallized ginger
4. scrape off with off with offset spatula
5. dump back in bowl and mix gently
6. store in airtight container
