One of our go-to “cleanup the fridge” dishes. It also is fast. For a while it was a weekly dish. Really, it is that versatile and tasty.
- 2 eggs, scrambled
- onion
- garlic (optional)
- ginger
- vegetables – usually carrots and whatever is on hand. usually peas
- brown rice that has previously been cooked.
- yuba strips
- soy sauce
- brown rice vinegar
- sesame oil
- Put canola oil in pan and fry the scrambled eggs into an omlet. You don’t want them 100% done as they will cook a bit more later.
- Add a little bit of sesame oil for flavor, then start in on savory (“aromatics”) like garlic, ginger and celery. Want to keep the pot from getting too dry, but also not too oily.
- First hard vegetables (carrots).
- Then soft vegetables.
- Then add rice, a little soy sauce, brown rice vinegar, toss it all together, finish with greens or peas.
